That’s why it becomes a specialty of Phu Quoc Island. An only small part of sea-urchins, called gonads, is edible. Cooking sea-urchins requires a great culinary skill. The most popular dish made from sea-urchins is sea-urchin soup.

    To prepare this soup, people use a spoon to gently scrape the orange gonads away from the edge of the shell and then rinse them in salt water. After that, they fry gonads in lard, seasoned with fish sauce and sprinkle spring onion, pepper on the top. Finally, put the fried gonads in a bowl of hot soup. Another recipe of sea-urchin is grilling. Sea-urchins are grilled over the hot coals until they odorize. All you need to do is using spoon gently scrape the orange, dip in special sauce and enjoy them. Dishes made from sea-urchins are delicate and musky.
