    Grilled pork patty – Nem nuong Dalat

    Nem nuong is a Vietnamese specialty made of pork. To make nem nuong, people cut the lean ground pork or tenderloin into small pieces, and pulse in the food processor with pepper, fish sauce, sugar, garlic powder, and some special fine herbs until it fully incorporated. The mixture will be divided into smaller parts. Each part has a long shape like a sauce. Then, people grill them above hot coals until the meat is done to a turn.

    Nem Nuong is served with fresh vegetables, optional fruits, and banh trang chien. Banh trang chien is a steamed cake made from rice flour. Then, people fry them in hot oil until its color turns from white into canary. To enjoy nem nuong, you have to fill a thin sheet of rice with a variety of herbs (including perilla leaf, sweet basil, chives, mint), the nem nuong (grilled pork patty), some banh trang chien, together with pickled radish, carrot, and shallots. Then roll it up carefully before dipping it into the peanut sauce.

    Small round rice pancake – Banh Can Dalat

    Another dish you must try when visiting Dalat is Banh Can (Bánh Căn). Banh Can, the little flour cake, is served in different ways. To make Banh Can, people combine the rice flour with a little “cơm nguội’ (fried rice) and then cook them in the round ‘pods’ over hot coals. The topping can be a quail egg, chicken egg, chopped, seasoned beef, which is up to your favorite. To enhance the flavor, people sprinkle a few spring onions. Alternatively, they can drop in the middle of the chopped, seasoned beef. Once the cake is done to a turn, it is crispy on the outside with a bubbly, spongy consistency on the inside. It’s perfect when absorbing with the salty-sweet dipping sauce.

    Another central dish that makes its way up to the highlands is Banh uot long ga. Without any efforts to advertise itself, Banh uot long ga attracts countless both domestic and foreign tourists. To make Banh uot, people mix rice flour with a lot of water. Then, spread the cake mixture in a special steam oven to make a very thin layer of pancake. After that, they roll up the layer and put it on the plate. In other regions, Banh uot is often served with minced pork, chicken egg, fried onion, and jelly ear. Meanwhile, in Dalat, it served with chicken and stir-fried chicken viscera.
